Hello and be welcome to this new post of my blog. I´m going
to tell you about a Delicious dish. This dish is prepared in the south of
Chile, specifically in Chiloe. This food is called “chochoca”, is made with
potatos and pork rinds(i dont know how to say “chicharrones”). It´s a kind of
dough with pork rinds, cook with firewood for hours and hours.
First, the cook make a dough with the potatos and flour.
Later, this dough is laid and scattered in a trunk. The most important thing is
the fire. This trunk is put in a wood fire and a person have to roll it for
hours and hours until the dough be gold and coocked. During that time they are
put to fry the pork rinds in lard.
And yes, how you can imagine this isn´t a very healthy dish,
but if you don´t eat it everyday you will not have problems. And, in my case, I
use eat it just in my summer vacations, and the vatacions are made for enjoy.
When the dough is ready, they take it off of the trunk and is
cut for the middle, leavin a big peace of dough. Now is the more important
moment. The pork rinds are scattered for all the dough, and then they roll it,
like a “brazo de reina”. The final step is cut it in portions, and like a extra
step take something for an upset stomach. In this moment the chochoca is ready
.
This dish bring me a lot of memories of a travel to Chiloe,
that was a very special travel to me. And is just delicious.
